For Kaimug Group, the shift to retail foodservice stemmed from a clear market trend. “We see a strong demand for fresh, warm food in retail — especially in supermarkets across Germany and Europe — paired with growing margin pressure on retailers,” said a Kaimug spokesperson. “This created the perfect opportunity to move beyond restaurant models and drive growth with new retail service concepts. The partnership has delivered immediate value to REWE Supermarkets, one of Germany’s leading grocery chains. “The benefits are straightforward,” the Kaimug spokesperson explained. “REWE earns rent per square meter plus 10% of our turnover — and we’re selling up to 200 dishes per day. Beyond direct sales, every foodservice customer drives additional in-store purchases, creating strong indirect revenue, boosting foot traffic, and turning shoppers into regulars.”

Turning retail space into food destinations

BOTINKIT thinks that in-store foodservice remains one of the few areas in retail capable of delivering restaurant-level margins when executed well. However, labour intensity, food waste and operational complexity have historically limited adoption.
